Recipe for Chocolate Cookies

People always ask me where I get the idea for my recipes. To be 100% honest, a lot of times therecipesI make up are aresult of whatever ingredients happen to be in my fridge (and then, if the recipe actuallyendsup tasting good,I jot the ingredients down, re-test and cross my fingers it works the second time.)

I know, not exactly scientific, but that’s how I do it. Here at Clean Cuisine, we firmly believe that food should be enjoyed, loved, and full of flavor! I love taking junk-filled recipes that I would normally avoid, and cleaning them up to make them healthy, and even more delicious!

Chocolate cookies recipes are quite simple, and most often include the same processed ingredients. Recipe for Cookie Dough

Since this recipe is grain-free, this recipe uses a mix of flour-free ingredients to create a chewy and solid dough. A combination of egg whites, walnuts, pecans, and prunes are all that’s needed to create this simple, and protein-rich dough!

The Best Natural Sweetener

If you use unrefined natural sweeteners that contain nutrients and the rest of the ingredients in the dessert are also unrefined “whole foods” then you cancreate a healthy sweet treat.

This recipe uses a bit of honey, alongside prunes, and date sugar for delicious and healthy alternatives to white or highly-processed sugars.

Cacao vs. Cocoa

Instead of cocoa (what is most common in stores) this recipes utilizes cacao powder instead. And while both cacao and cocoa are derived from cacao beans, the difference all comes down to the processing of the chocolate.

Cacao

Cacao is the minimally processed product of cacao beans, resulting in a highly nutrient-dense, rich powder. To achieve such a high percentage of nutrient retainment, cacao is cold-pressed to remove the cacao butter, and roasted at low temperatures.

Cocoa

You might have guessed it by now, but cocoa is the highly processed form of cacao. It still maintains some of its original nutrients, but its not nearly as beneficial as its unprocessed counterpart.

  1. Preheat oven to 300 degrees. Lightly grease a baking sheet with the extra virgin coconut oil.
  2. In a small bowl, whisk together the honey, egg whites and salt.
  3. Place the walnuts, pecans, prunes, date or coconut palm sugar and cacao powder in a high-speed blender, and process into fine crumbs. Transfer the “crumbs” to a large mixing bowl.
  4. Add the wet ingredients in with the dry; mix well. Using a tablespoon as a measuring device, form 14 small round cookies. Bake for 15-17 minutes, or until done but still chewy. Cool completely before serving.
