St Patricks Day Meringue Cookie Recipe

This St. Patrick's day, make a festive and easy parfait dessert! With just a few simple ingredients, you can have this sweet treat ready in no time.

Ingredients

  • 2 Egg Whites, at room temperature
  • ¼ Teaspoon Cream of Tartar
  • ½ Cup Granulated Sugar
  • 1 Drop Green Gel Food Coloring
  • ¾ Cup White Candy Melts
  • 36 Green M&Ms
  • Green Decorating Frosting

Instructions

  1. Preheat oven the oven to 200 degrees Fahrenheit.
  2. Line a baking sheet with parchment paper and set aside.
  3. Beat egg whites and cream of tartar on low speed in your standing mixer.
  4. Slowly add granulated sugar and slow increase the speed of your mixer to high.
  5. Beat for at least 10 minutes or until stiff peaks start to form in your egg whites.
  6. Next, add the green food coloring gel and keep mixing until the meringue starts to change to green. Want it a darker green, add more gel.
  7. Scoop the meringue into a decorating bag and attach a Wilton tip #21 to your bag.
  8. Pipe out circular meringue cookies on the parchment paper cookie sheet. You want them about 2 inches in diameter.
  9. Once cookies are piped onto the parchment paper, pipe out a second layer around the circumference to create a cavity in the center.
  10. Bake for 2 hours at 200 degrees F.
  11. Turn off the heat but keep the meringue cookies in the oven for an additional 35 to 40 minutes.
  12. Finally, remove them from the oven and let them cool on the pan for 5 minutes.
  13. Place the white candy melts in a bowl and microwave in 30-second intervals until completely melted, making sure to stir between each interval. Or, melt them using a double boiler.
  14. Once the candy is melted, use a spoon to fill the center of each meringue cookie with the candy melts.
  15. Place 3 M&Ms on the melted candy, in a triangular shape to make it look like a clover.
  16. Refrigerate the filled meringue cookies for 15 minutes.
  17. Fill a decorating bag with green icing and attach a Wilton icing tip #5.
  18. Frost out a stem underneath each M&M clover.
  19. Serve and enjoy!
